Her hair was too controlled throughout the series (with the exception of Philosopher’s Stone). Sure, it was pretty and suited for Emma, but it was not Hermione’s “signature” style. It was one of her most prominent physical characteristics in the books and it stinks that they didn’t keep it for the rest of the movies.
